BRUSCHETTA Recipe by Miley Brands
(Makes 6-8 servings. Double or triple recipe as needed)
2 Medium Tomatoes
1/2 tsp Finely Chopped Garlic
3 Large Basil Leaves (Chopped Julienne Style)
1 Tbsp Balsamic Vinegar
1/2 tsp Miley Q Beef Rub Seasoning
1/3 Cup of Finely Grated Parmesan Reggiano Cheese
Extra Virgin Olive Oil
Using a bread knife, slice Baguette diagonally 1/4" - 3/8" thick. Place in toaster oven until golden brown.
While bread is toasting, dice tomatoes (1/4" inch in size) and place in mixing bowl. Sprinkle Miley Q Beef Rub Seasoning over tomatoes and stir. Add finely chopped garlic along with julienne sliced basil leaves. Now add vinegar, stir and set aside.
Remove baguette pieces from the toaster and place on a flat surface. Lightly drizzle extra virgin olive oil over each piece, then vigorously rub each piece with a clove of garlic (one side only).
Plate the toasted baguette pieces on a serving tray and top each with a generous tomato mixture. Finish with a light dusting of Parmesan Reggiano and serve.
Pair with your favorite Red Blend or a Pinot Grigio (well chilled) and ENJOY!
